Just put my favorite dinner in the crock pot!

My mom has a recipe called Colorado Pot Roast that is amazing! My husband is not a fan of (aka he hates!) tomatoes and onions, and those are the main ingredients. The recipe also requires very lean beef, or my favorite is venison. We didn't get a deer this year:( But  friend gave us a small pack of venison- not enough for all of us for dinner. It has been sitting in the fridge for 4 days, hubby told me he didn't want it to be wasted on something he didn't like, but he hates to cook venison, so today I decided to turn it into my favorite since he wasn't going to cook it. It isn't nearly 4lbs like the recipe calls for, but it is delicious even with a small amount of meat. And very healthy too! Great served over brown rice.

Anyways, here is the recipe.

Colorado Pot Roast


Ingredients

4 lb. beef roast, trimmed of fat
1 can diced tomatoes
2 cloves garlic
1 t. salt
1/2 t. pepper
1 c. sliced onion
1/4 c. vinegar
1/4 c. lemon juice
1/4 c. ketchup
2 T. brown sugar
1 T. Worcestershire sauce
1 t. mustard
1/4 t. paprika

Directions

Put roast in crock-pot. Pour remaining ingredients over roast and cook on high for 2 hours, then turn to low for 4-5 more hours. Serve over rice. Sauce may be thickened with flour and water.

Treadmill goal

I gained way too much weight between the Thanksgiving Holiday and Christmas. I felt disgusting at a family get together because my pants were so tight! So on Christmas day I decided that as a gift to myself, I was going to start exercising and loose weight. My main goal was to go on the treadmill, every single day, unless I was very sick. So far, I have been successful for 22 days! I am very proud of myself.

 In January so far I am averaging about 2 miles a day. I get up around 6am every morning and try to get 1 mile in, so that if nothing else goes good that day, I know I have at least accomplished this. I don't mind waking up early at all, I have always been a morning person, but my 2 1/2 year old daughter somehow senses when I wake up early, and has been coming down to the basement, 2 floors below her room, to visit me at 6:30ish am while I am on the treadmill! Urgh. Then I have to carry her all the way up and hope that she stays in her bed- ha! One morning I got done on the treadmill to find her laying in my bed next to the sleeping husband eating marshmallows out of the bag! She told me she had 4 so far, but then later told me it was 5. Either way, way too much sugar before 7 am!

I almost always run/jog/walk again in the afternoon sometime (only missed 3 afternoons so far this month). I almost always do a mile, usually more. When I started 3 weeks ago, I barely jogged at all, mostly just a fast walk. I was doing a mile in about 17.30 minutes! Yes I know, very sad. But, tonight was the first time I ran a mile non stop!! And did it in 12.40:D So I improved almost 5 minutes in 3 weeks. It felt amazing:) My next big goal is to run a 10 minute mile.

I have only lost a few pounds so far, but my jeans are fitting much better and hubby says my love handles look smaller:) Yay! Oddly enough my big motivation for exercising is pinterest. I love going to the fitness page and looking at all the motivational pictures, quotes and work outs.

Thats all for now, I will try to actually start writing regularly in my blog, but no promises:) But I am making a promise to myself to keep up with the treadmill everyday!!
